Cabbage, coconut, peanut butter & spinach…??!!

Yummy super greens dish served with a glass of homemade spinach & pomegranate smoothie

First, note that garlic can be added to any of the below, or not, as your tastes prefer! Same for seasoning with sea salt and/on ground peppercorns.

Here, I made a simple omelette, cooking up onions and tomatoes, then tossing in shredded spinach followed by 2 beaten eggs. Simple πŸ™‚

The cabbage and coconut mash shown here is cold, straight from the fridge; I’d made several portions of the mash the previous evening to save me some time πŸ™‚ Tastes lovely warm and cold πŸ™‚

To make this mash, I lightly cooked about 10 large leaves of savoy cabbage (shredded), an onion (thinly sliced), 1 tbsp of ginger powder, chilli flakes,Β 1 tbsp of peanut butter, and 1/2 crumbled vegetable stockcube in some coconut milk. This takes only 10 mins max to cook… the cabbage should be very crunchy not floppy! Then use a hand blender to bring it to a consistency of mash. Season for taste.

I topped the dish with sprouts, again! I have a little passion for them at the moment. May have to invest some time in learning to grow my own…

Broccoli & carrots in ginger

Below, prepare some quinoa (made up in just 10-12 mins, and add a little piece of vegetable stockcube to the water).

In a pan, cook some onions and garlic, crumble in a little vegetable stockcube, and then add in someΒ ginger powder. Season to taste. Add some cream or milk (or a blend) – the measure is approx. 300 ml per person depending on desired portion size and thickness – and warm up but not boil. Add the carrots (cut baton style) and the broccoli. Keeping everything very crisp and don’t over cook, i.e. 10 mins max!
