After an evening of searching the cupboards for a chocolate ‘fix’, my housemate and I decided to look at our options and get creative! Thanks to the internet, we found a superb recipe for panfried flapjack, made up in less than 10 minutes!! We didn’t eat it straight away though, as tempting as it was! We left it in my cold atelier for 30 minutes, to let the chocolate topping harden a little 🙂

Panfried flapjack: oats, dried fruits, seeds, maraschino cherries, coconut with milk/dark chocolate topping

We adapted the recipe a little. I used less than half the butter suggested, and also swapped out the sugar for honey instead.  We didn’t use the paper to line the tin either as we took the flapjack out once it had cooled. Stored it in tinfoil, in the fridge.

The flapjack is perfect the next morning, having completely cooled and set. Served with coffee or smoothie, this is a very tasty healthy breakfast… well, it contains oats and seeds… quite healthy 😉

We have been very creative with the ingredients… just 2 days later, we tried another variation! Absolute heaven!!

Panfried flapjack: oats, dried fruits, seeds, cherry jam, blueberry jam, coconut with white milk chocolate & coffee topping

On this occasion, I didn’t use butter at all. We also added some leftover coffee into the chocolate sauce to create a glaze. Worked a treat!

I have been experimenting with making a ‘sugarless’ chocolate, details of which I have tweeted to housemate. This could be the basis for a flapjack topping as well.
